Our Cuvée Brut is a blend of Chardonnay, Pinot Noir, and French Colombard. Produced in the "Methode Champenoise" technique, each varietal is harvested before traditional white wine grapes, at relative low sugar and high acid content. The result is a crisp, lively sparkling wine of elegance and finesse. Our Brut has delicious aromas of toasted almond and crème brûlée. The mouthfeel is lively with a little creaminess at the back of the palette. Our Brut is dry and has nice baked peach and pear flavors throughout.
Composition: Chardonnay (51%), Pinot Noir (40%), and French Colombard (9%).
Primary Fermentation: stainless steel and neutral French oak
Secondary Fermentation: in bottle
Aging: aged in bottle for 16 months
